Our Produce

All our meat produce, whenever possible, is locally sourced from farms in the North West of England.

Our Beef
We buy our beef locally, purchasing full carcasses which we then hang for a minimum of 21 days to ensure optimum flavour and quality. We then cut prepare the meat to our customers specifications.

Steaks: Sirloin, Rump, Ribeye, T Bone, Fillet, Porterhouse Frying and Braising
Joints: Fillet, Sirloin, Striploin, Rump, Ribeye Roast, Topside and Brisket
Cuts: Beef Strips, Skirt, Diced Chuck, Stew, Steak & Kidney and Chuck Mince

Our Lamb
Our Lambs are supplied by Rod Spence of Burholme Farm, Clitheroe, Lancashire. Our Salt March Lambs come to us from Holker Hall Estate, Cartmel, Cumbria. We also source lamb from other local farms and from New Zealand when British lambs are out of season.

Cuts: Leg of Lamb, Shoulder (boned), Rack of Lamb, Lamb Shanks, Lamb Rump, Lamb Leg Chops, Lamb Steak, Lamb Mince, Lamb Henry - Blades & Knuckles, Lamb Noisettes, Lamb Eyes, Lamb Neck Fillet and Lamb Cutlets.

Our Pork
Our succulent pork is sourced from North West Farms. We buy full pigs so we can produce many cuts of pork and provide meat for our hams, pancetta and wide range of sausages.

Cuts: Pork Fillet, Pork Shoulder, Leg of Pork, Loin of Pork, Striploin, Pork Chops, Pork Steaks, Escallopes of Pork, Ribs, Belly Pork and Pork Horseshoe.

Our Poultry
Chicken is at its very best when it is really fresh. We, therefore, buy full chickens, ducks and turkeys and process them in our dedicated specialist poultry production area. This way we can ensure the highest of quality for fillets, supremes and other cuts.

Chicken Cuts: Whole Chickens, Chicken Fillets, Chicken Inner Fillet, Chicken Supreme, Diced Chicken, Chicken Strips, Double Breast, Chicken Thighs, Chicken Mince, Drumsticks.
Duck Cuts: Duck Breast, Duck, Legs, Whole Duck.
Turkey Cuts: Whole Turkeys, Turkey Crowns, Turkey Breast.

Bacon & Hams
We cure our own bacon on-site and we sell it in many forms including: Back Bacon, Middle Bacon, Streaky Bacon, Smoked Bacon, Bacon Chops as well as our very popular Horseshoe Gammon Steaks.
We also cure our own Pancetta, Lancashire Air Dried and Honey Roast Hams.

Meat Products
We produce around 15 varieties of sausages from the family favourite, Cumberland through to the more unusual Chicken & Black Pudding.
We produce Black & White Puddings, Burgers, Kebabs and Haggis and sell a range of offal including Liver and Kidneys.
Our cooked meat range includes: Boiled Ham, Roast Beef, Roast Turkey, Honey Roast Ham and Chicken Drumsticks.
